1. Simon: I can’t understand why there is so much talk about nutrition as a growing science.

Tom: Americans want to be healthy. But most of us have no understanding of nutrition problems.

Simon: Every time I see my family doctor, he advises me to stick to a low cholesterol diet.

Tom: And do you follow his advice?

Simon: It’s hard to stick to a diet with my busy schedule.

Tom: For your health, it is very important to get a balanced diet.

 

Mary: What is a balanced diet?

Doctor: Adults can get a balanced diet by including foods from the four main food groups. These are: the milk group (milk, cheese, yogurt, and other dairy foods); the meet group (meat, poultry, fish, eggs, and meat alternates such as beans, lentils, and nuts); the bread group (bread, cereals, noodles etc.); and the vegetable and fruit.

Mary: Can people who don’t eat meat or fish stay healthy?

Doctor: Absolutely. By eating enough-dairy foods and meat alternates, people can get essential proteins.

A shop assistant: Good morning. Can I help you?

A customer: Mmm, can you tell me anything about the nutritional value of canned vegetables?

A shop assistant: The nutritional difference depends more on how vegetables are prepared than on whether they are bought fresh or canned.

A customer: Oh, you’re right! You could become a professional dietitian.

A shop assistant: It’s just my hobby to read about food and health.

A customer: Doctors advise to avoid such foods as bread or potatoes. What’s your view?

A shop assistant: By avoiding bread and potatoes you cut out several B vitamins, vitamin C and other nutrients

A customer: Thank you for your valuable information.

 

1. Look at the Healthy Living Pyramid. Comment on foods we should eat, quantity of servings we should have a day. Make your personal menu for a day.

Role-play the following situations.

a. Your friend prefers fattening food. You’re a healthy-food eater. Try to convince him to pay attention to what he eats. Say that healthy eating will help him to get the right balance of vitamins, minerals, and other nutrients. It will help him feel his best and have plenty of energy. It can help him handle stress better. Don’t forget to mention that healthy eating is one of the best things he can do to prevent and control many health problems, such as: heart disease, high blood pressure, type 2 diabetes, some types of cancer.

 

b. You’re a junk food lover. Your friend is not. Tell him about your preferences. Speak about convenience; that life is too short and you want to enjoy what you eat. Besides, eating healthy food is too expensive and it takes effort to find healthy options.

c. You’re discussing with your mother reasons for going vegetarian. Bring your mother round saying that healthy vegetarian diets support a lifetime of good health and provide protection against numerous diseases; vegetarianism is also the ultimate weight-loss diet; being healthier on a vegetarian diet means spending less on health care and vegetarian foods tend to cost less than meat based items.

 

d. You like eating meat. Your younger sister doesn’t. Tell her that meat is a good kind of iron and vitamin B12 only comes from animals. This nutrient keeps your body free of anemia, keeps nerve and blood cells functioning well, and also helps make genetic material. Say that our digestive systems are well equipped to make full use of the healthy fats, proteins and nutrients found in animal foods.

High quality, unprocessed meat is among the most nutritious foods in the world.
